Pepper Sprout

Things I made tonight:  Cooking Light’s Simply Roasted Pork,  http://www.myrecipes.com/recipe/simply-roasted-pork-10000000689946/.
I only made a 1 lb. roast (and had leftovers, for two people) but man, this was delicious, and an impressive presentation.
I made it with roasted acorn squash.  Cut the squash in half, scoop out the seeds and goo.  To make things easier on yourself, cut a small piece off the back of the squash so it will lay flat on a baking tray.  Melt 2 tbs. of butter in a bowl.  Add 2 tbs. honey and 2 tsp. dijon mustard.  Whisk, and then pour the mixture into the hollows in the middle of the acorn squash.  Officially, bake at 400 for about 30-40 minutes, depending on the size of the squash.  Unofficially, bake at the temperature you are baking whatever else you are making that requires the oven (if between about 350 and 450) until the flesh of the squash is soft and slightly browned on top.
Delicious, easy, hearty winter dinner.
